Our mission is to fix everything we can within the restaurant industry — sustainably sourced food is just the beginning — sustainably supported people are just as important.
Our focus is on using and eating what is here and near now while drawing on a global culinary ethos. We want to begin building a food culture that is more attuned to what defines us as a region, as a Midwestern community.
Concept
Nuaa is a fine-dining restaurant that combines a global culinary ethos with Midwestern ingredients. Food that is bold, understated, honest, comforting and unique. Where margins are higher because the most humble ingredients are allowed to sing.
It’s not just farm-to-table but also nose-to-tail and stem-to-root. It’s sustainable eating but equally important, it’s work with room to grow and sustainable salaries. In the future we want to grow to be able to change the narrative of food and community by redistributing ownership of restaurants, focusing primarily on BIPOC & LGBTQIA+ communities.
